Grilled Fish and Pan Roasted Potatoes

Moderate difficulty
Serves 4

500g plain white fish fillets

¾ cups plain flour

4 teaspoons mixed herbs

1 small lemon, juiced

3 medium potatoes, boiled but still firm, chopped

½ medium brown onion, diced

1 tablespoon olive oil

  1. Place cooked, chopped potatoes and onion in a non-stick frypan with half the oil over a medium heat. Cook until onion turns golden brown and potatoes are crispy.

  2. Meanwhile, mix flour and herbs together. Sprinkle the flour mixture over both sides of the fish fillets. Place the rest of the oil in a grill pan over medium heat. Grill fish in batches until golden on both sides and just cooked through.

  3. Serve with a green side salad.

Smart tip

  • Any firm white fish fillets will do for this recipe. Try barramundi, basa, hoki, whiting or snapper.
