Apple and Cinnamon Muffins

1 ½ cups wholemeal self-raising flour

¼ cups brown sugar

2 teaspoons cinnamon

¾ cup reduced fat milk

1 egg

2 small apples, diced


  1. Preheat oven to 200°C.
  2. Line a muffin tin with paper muffin cups.
  3. Beat egg with milk. Add flour, sugar and cinnamon and mix until just combined. Stir in diced apple. Spoon mixture into muffin pans and bake for 15–20 minutes until golden.
